Challenge
Cheese texture and taste depend on temperature, cooking time and mixing. Each cheese type needed its own settings, and operators needed to run them the same way in every batch.
Solution
Each cheese type now has its own six-step program, and every step sets its own time and the direction and speed of two mixing motors. A VEICHI VFD handles speed control, and the system runs on a Wecon PLC with expansion I/O and a Wecon HMI.
The PLC controls the cooking temperature against its setpoint and operates the steam, double-jacket and discharge valves. Programs are saved by number and name and loaded for each cheese type.
Scope of work
- Wecon PLC programming
- Wecon HMI recipe screen
- Temperature control
- Cooking time for each step
- Direction and speed control for two mixing motors
- VFD integration
- Steam, jacket and discharge valve control
- Programs for each cheese type
Result
Each cheese type is cooked from its own saved program, called up by number and name, so every batch follows the same temperature, time and mixing steps.
